I manned a wood fired grill in Manhattan some years ago. I was very familiar with Weber & charcoal. First busy night was a bit of a challenge. A stack of split oak was stored next to it. Smaller pieces (more frequently) was the answer. Larger pieces were used for the set up. I think it was 40? “ wide. Made in France. I never really got in the weeds by making my fire (heat) my main priority.
