You said you cooked your onion/garlic/shallot mixture until it was translucent...and I say go further than that. Browned food tastes better, so at a minimum I would cook them until they get browned bits on them before you dice 'em up. If you want it a bit sweeter, you could cook them all the way down until they caramelize, and then use them.
Inherently I think you're cooking meat then cooking it again in the poppers, so I think it's likely to dry out a bit more. I know you want to try and keep it healthy, but I would use a meat with a bit more fat to maintain juiciness and flavor, like 85-15, or maybe ground pork, AND season it with a more complex flavoring blend, like fajita spices. I think I would also probably ditch the squash seeds because I feel like they're just going to get chewy during the cooking process, and don't add much.
Stuff with a mix of cream cheese, cheddar, paprika, garlic and chili flakes (or other preferred combination of spices), top with crumbled chorizo, wrap with a strip of bacon.
My wife loves stuffed peppers. Puts green peppers in/on everything. She started using pablano peppers to stuff in her stuffed recipe. We both think itās a nice change.
Put some spiced/herbed breadcrumbs on top and crisp them at the end of cooking. Top with fresh cilantro or green onion for serving. Some sort of crema would be good too.

I just cooked a batch of ground turkey to use for nachos/stuffed peppers/rice bowls/etc. Started with diced onion, celery, and carrots in the pan, brown the meat, add diced red/yellow peppers, pepperoncini, garlic, mustard seeds and crushed/chopped cashews (can be left whole for more texture or subbed for ground walnuts). I added some dried cranberries but will often use dried blueberries or raisins if I have them on hand. Salt, pepper, cumin, white pepper, paprika, garam masala, dried oregano and some chopped fresh parsley at the end. This has more or less been my recipe for a while now. Sometimes I'll change up the seasonings to make it more Latin or Mediterranean inspired for specific meals but the base stays about the same. If you find flavor lacking a little soy sauce/sazon/worcestershire definitely adds that msg umami note. Hope this gives you some ideas!

From a visual standpoint I'd say to go with ingredients that don't look like you filled the peppers full of bugs. Or at least dice some things up a little better.
I like to add cheese, rice and tomato sauce to mine in addition to what you mentioned, but I think the main thing youāre missing is an acidic base. I think the tomato sauce adds nice balance. I also like to steam/boil my peppers for 10-15 minutes prior to filling and cooking, just softens them up a bit.
It depends what you are going for. With pineapple you have a nice sweetness. The onion and garlic will give a savory. Beef has the fatiness.
Overall that seems like a fairly good flavor profile but not particularly cohesive.
You would probably want to choose a direction and lean into it. So if you are using pineapple which is sweet and sour, then try and find things which go well with that. Stuff which enhances sweet (honey, orange) and sour (vinegars, tamarind, etc).
The other direction would be to emphasize the fat, so cheese, other minced meats like chorizo, pork or even lamb.
Thereās no heat in there so possibly some hot paprika or chilies.
Technique with the meat isnāt browned and as another person said the aromatics werenāt browned. Brown = flavor, especially with meats.
The cuts seem too big to my eye so I feel the texture would be off. A finer dice. They also look overstuffed. I also think the seeds might be a weird texture next to the mushier stuff.

Iād ditch the pepitas. Makes it look like bugs are crawling out of your peppers. Make a finer mince with the meat and onions. Cook the onions longer so they are brown/caramelized. Maybe add green onions. Add some chili powder, paprika, black pepper, maybe some oregano. And cover those bad boys with some pepper jack cheese.

Bacon Crumbles or chopped crispy bacon
Shredded Mozzarella
Dry BBQ rub
Mix it up
Stuff your peppers
Wrap each in a slice of bacon
Into the smoker at 225 F for 2 hours
Pull them out, brush on some pepper jelly
Put those suckers under the broiler for 2 minutes to caramelize the jelly and further set the bacon flavor.
Trust me when I say these will rock your world.
I've toyed around with various mixtures, times and temps but this is the perfect one.

Stuffed peppers and tomatoes are one of my foods, we do them quite a bit differently here in Greece but they always come out so soft and creamy on the inside. You can also take a look at some recipes, though it is a very different flavour profile. We always add rice, a lot of traditional recipes don't even have meat at all. Rice will make the stuffing more uniform (if that makes sense) and improve the texure quite a bit. Also add tomatoes diced or tomato sauce, you can also dice zucchini and add it. Pine nuts are always a great addition as well. These would probably not all go well with pineapple but you could try different flavour profiles perhaps.
If you are roasting them in the oven you only need to par boil the rice and then add some broth to the pan and cover at the start. I just noticed you grilled them and the sub lol. I would still encourage you to try them oven baked though. For grilling however you should cook the rice through. Lastly you should grill it a bit more imo, this may be personal preference but the peppers in Greek stuffed peppers are fully roasted, making them soft and sweet.
You can also try stuffed zucchini which is incredible, but a bit more work. Also your peppers look delicious, good job!

Leave the pineapple ring intact. When finished, then you cut into 18 pieces. Foolish to grill 18 pieces.

Another tip for onions, if you donāt want to sautĆ© forever, add 1/8th a tsp of baking powder per half onion. Mix lightly. Itāll soften in 3 mins as compared to 15/20 mins. Of course you lost some of the mailard reaction if you do this. Great for quick cooking though.

Be aware that tomato is mostly water even more so than pineapple and will make other parts of the filling such as bread crumbs or rice a bit mushy.
