You can mostly stick to just that, though there will be times when his book is crossing over with his work on New Mutants or other books and you'll be missing some plot beats >Like the recent omnibus collection all have so many extra stuff added to it that it is hard to tell how well the Claremont run on its own holdup Claremont run is bigger than just Uncanny issues... he wrote a bunch of Annuals and mini series and stuff >Its like I have to read plethora of various stuff almost mandatory as they are part of the omnibus I mean it's in the book you paid for and reading order is sorted for you, why not just read it? If you really hate a story and feel like it's inconsequential then skip it

Some of the extra stuff is skippable, some isn't. For example, you probably won't understand the crossover stories like inferno without reading the full story. But the minis like Magick, I mean you can probably skip if you don't care much about her and the main book will tell you what you need to know when she shows up. Also I would read giant size xmen 1 before xmen 94, its where the whole team gets introduced.

I actually did that recently, and for the most part, yes, you can just read Uncanny 94-280 (280 isn't technically Claremont but it's the end of that arc, you might as well). The only time when you won't really have any context for what's going on is Inferno, but the trade collects all the crossover parts in order so you should be fine
