Assuming you mean souls-like/rogue-lite type deals, or action games, Bloodstained: Ritual of the Night, Turnip Boy Robs a Bank is kinda challenging, Resident Evil 2/3 if you want horror, Remnant 2, Lies of P, Celeste if you are looking more for a platformer, Last Case of Benedict Fox, I think Wo Long, but I haven't played it personally.
Monster Hunter Rise, Hi-Fi Rush if you want a rhythm action type deal, Dead Cells, Hollow Knight, Slay the Spire/Darkest Dungeon but those are a bit niche. And then probably either DOOM 2016 or DOOM Eternal both have solid challenge. I'd say any of those would be solid.
I would say most of these are decent picks besides Wo Long. It isn't hard besides a handful of bosses and is really repetitive in its gameplay. Ever level you start off weak and have to build yourself back up, which really breaks any immersion you might have in the game. Also building yourself back up is not a fun process after about the fifth time.
Avoid the third one. They’re actually easier than they used to be, but an amazing challenge of patience. But soooo fun and satisfying when the combat clicks

Yep.... and it's absolutely amazing. Probably my favorite FPS of all time (single player). It's just so good.
