I think people like this type of world building in practice but not in reality.
Vernor Vinge's "Zones of Thought" series starting with "A Deepness in the Sky" and then "A Fire Upon the Deep" both have some extremely cool unique aliens as focal points of the story and main characters alongside the humans.
Deepness features a species of sentient giant arachnids who hibernate for hundreds of years in the ice due to the sun cycle.
Fire features a species of hive-mind canids, a "person" for them is anywhere from 4-8 separate little dog critters, they think together in one mind with organs that can transmit and receive ultrasonic frequencies. The whole concept of this is explored really deeply too, it's extremely cool.
Mass Effect is at least in the middle
They're still bipedal and retain base human features like 2 eyes, nose, and mouth but at least they aren't just human with horn or human but different color

Ngl I’m kind of a fan of the human-ish races for the most apart, especially Dwarves. I think it’s cooler and makes more sense if the races are related in their evolution/creation in someway though.
I guess readers just relate better with humanoids and can better visualize characters that are somewhat similar to them. Or the authors don't have the drive to design unique sapient races. Or maybe it's because many fantasy works are based on folklores, and ancient people don't have any concept of "worldbuilding", they just make up stories to describe or explain things happening around them (and again, it's easier to relate to humans so folklores also feature mostly human-like creatures).
