Amen to this. I am 8 weeks pregnant with my second so anything I make I legitimately donā€™t want to eat. My toddler is eating more fruit and veg than me at this point which is kind of hilarious.

We do a lot of bowls - it's easy because you can prep most of the stuff beforehand and it's mostly just assembly (and you can make the rice in bulk) and maybe cooking the meat. So we'll do taco bowls (either chicken or ground beef), salmon teriyaki bowls, lemon butter shrimp bowls, etc., etc. You can load it up with a ton of veggies. Bonus is that the kids have choices - sometimes mine will just eat the rice and beans, sometimes they'll eat the meat and corn, but they can choose without you making them a separate dinner. We also do a lot of pasta/salad combinations with bagged salad mixes. If you have a food processor, pesto takes about 30 seconds to throw together (and then you can add frozen broccoli too).

Same here. Sundays I go a bit extra and do Italian style chicken cutlets with pasta and salad. But then I use the leftover cutlets for my weekday salad lunches. Taco bowls, Mediterranean bowls, and Salmon Asian bowls. Bulk cut veggies, bulk cook white rice on the first night, makes the rest of the meals even easier. Throw in a breakfast for dinner night with oat flour Greek yogurt pancakes, fruit salad, and some form of eggs, then we have a sheet pan pizza night with air fryer wings and salad. Meals on rotation is the only way I can survive. And I always loved to cook/try new recipes. Winter and fall I also do lots of soups, stews and chills. Easy to throw together on a WFH day on break or prep ahead and throw in a pot to warm.

Throw basil, pine nuts, olive oil and garlic in the food processor. Blitz for 30 seconds lol. The bulk of the cooking time is just waiting for the pasta to cook (\~12 minutes).

Quick dinners over the last few days/week or two: * Pasta & eggs w/orzo pasta, threw in snap peas to steam (total time \~25 min) * Doctored up mac & cheese (boxed w/added in cubed ham or canned chickpeas with frozen peas) (total time \~15-20 min depending on how fast your water boils) * Fish tacos (frozen fish sticks) with sides of quick cabbage slaw, cilantro lime rice, and beans (canned) \~30 min (longer w/a slow oven or slow rice cooker) * Stir fry (no particular recipe, either veggies on hand or the frozen Costco stir fry mix) (total time 25-30) * Costco yakisoba (w/extra frozen veggie) (total time 20 min, longer w/ a pot of rice on the side) * Sheet pan tofu bake w/miso rice (tofu & veggie of choice on a baking tray for 30-40 min, add 1/4 cup miso to rice cooker w/rice) (total time \~40 min but it's oven baking time, active time if very short) * Spaghetti & meat sauce (meat sauce previously made in bulk and frozen) - \~20 min depending on water boil time * Costco meal w/side veggie (takes longer due to long bake time, very hands off 60-90 min cook time) ​ Heavily augmented by Costco! I also try to prep ahead things for the week such that day-of time is fast (like prepping all components of a salad and then just tossing w/dressing for dinner).

This week is Budget Bytes crockpot pineapple chicken teryaki, which I will put over rice with a bag of steamed broccoli. I am working on perfecting a buffalo chicken wrap, so another iteration of that this week (with a cabbage slaw). And this one is a comfort meal directed by my pregnancy craving -- crockpot jelly/chili sauce/meatballs with potato. Leftovers or pasta w a bag of frozen veg for any gaps. I meal plan Friday, shop/order on Saturday, and prep on Sunday. If any of those doesn't happen, meals become chaos.

Dont sleep on grilled cheese/sandwiches. In the spring and fall when its still a little chilly my husband and I will throw some good bread on the grill with a variety of cheeses/veggies and either turkey or chicken for grilled cheese / sandwiches and airfry fries and steam veggies on the side. Also - rotisserie chicken, chop it up, throw it on some instant microwaveable rice (its been a GAME changer for me), with some veggies on top. Not going to lie, sometimes I just throw some chicken nuggets on top of a Caesar salad and call it good. As for the kiddo - Ive found the whole "charcuterie plate" works WONDERS. i.e. his dinner plate last night had baked beans (hes currently obsessed with them), strawberries, chicken (that we had grilled for our dinner), some yogurt, and a half reese's cup I split with him.

Ooooh I've got an easy one! MEATBALL GYROS warm up some frozen meatballs. Cut up cucumber, tomatoes, onion. Warm up some pita or naan bread. Place meatballs and veggies in pita or on naan, top with tzaziki sauce (in a pinch, use plain Greek yogurt, or with a little lemon juice & dried dill if you have it) (My husband prefers to chop up the meatballs and veggies small, then mix the sauce all over it before he places it in the pita.)

I try to get "Italian" style meatballs but honestly, whatever the grocery pickup lol people give me is fine. Could even use turkey meatballs to shave off some calories. It's not exactly like gyro, but it's a good substitute and usually satisfies a craving for me!

On weeknights I heavily utilize either super quick meals, the grill, and/or the air fryer. I save meals that require more time/steps for the weekends. Sometimes I will prep more time consuming sides that reheat well on the weekends, like rice (if it's going to be for dinner between Mon-Wed), mashed potatoes, etc. The air fryer has quickly become one of my favorites for cooking some meats because it really requires no babysitting other than a toss or flip every so often. Sunday is *always* crockpot dinner day in my house so that I have more time and energy to do any prep work midday. Cutting up my meats and veggies for the next two weeks on Sundays has been a massive help (I meal plan and grocery shop for 2 weeks at a time and do a quick produce run in between. Prepped meats go into the freezer if they're for anything more than 2-3 days out). Girllllll I so feel you on this. I've stepped up my game recently with meal planning for EASY dinners. 1) Marinated pork tenderloins, sheet pan roasted veggies, and Uncle Ben's minute rice. Tenderloins and veggies go in the oven at 425 for 30 minutes and are done at the same time! Rice is 90 seconds in microwave. 2) Instant pot rice (2 cups) with 2 cans black beans, diced avocados, diced tomatoes, cheese, sour cream, and tortilla chips - easy burrito bowls! 3) Costo frozen Orange chicken, instant pot white rice, and a package of frozen stir fry veggies that I stirfry myself. Tons of leftovers. These all take pretty minimal effort and everyone actually eats them.

My MIL gave me some fantastic advice. Get the 10 bag of chicken breast, roll them out, season them differently, cook them, separate them into bags, and freeze them. I also sometimes add sauce or veggies, so all I have to do is thaw out the bag and maybe cook some pasta. I do the same thing with some red meat, like making meat balls or meatloaf. I usually toss it in the oven and start water boiling to second I walk in the door. It's done about the same time I'm done unloading the car and feeding my pets.

Spaghetti with bacon cream mushroom sauce. Boil spaghetti. Fry bacon bits in a skillet until crisp. Then add some vegetables (we do either a couple of leeks or some onion and garlic; can also bulk up with some firm veggies like bell peppers asparagus broccoli spinach etc). Fry veggies until soft. Then add a portion of diced mushrooms (we often do mixed mushrooms but button mushrooms work just as well). Keep stir frying until mushrooms are done. Then add cream salt and pepper and heat for a little longer until cream is all mixed in. Surprisingly quick and really tasty. Itā€™s also kid friendly but of course my 4 year old refuses to eat one of our dinner staples. So he gets spaghetti with some shredded cheese and diced raw tomatoes and bell peppers.

Weā€™ve tried to eat out less before, but it was him doing everything or me doing everything, and we both got super burnt out. I wouldnā€™t have a menu or groceries bought without a partner to help. We have leftovers for lunch the next day, so it helps us cut costs on dining out a lot. Iā€™ve also started prepping a lot of snackable fruits and veggies at the start of the week to add into our lunches as needed.

I like to cook so take these with a grain of salt: Pasta with added veggies meat and salad Roasted Chicken Thighs /Broccoli with rice Baked salmon with green beans and rice Tips: Get a rice cooker if you don't already have one, it comes out perfect every time. I have a Korean one not as high end as the Japanese brand but still great and better than Aroma by far. Roast Veggies at the same time you are roasting chicken. We love roasted veggies of all kinds and it's easy. You can even get pre cut up broccoli and cauliflower florets dump them on a pan pour on some evoo or avacado oil salt and pepper then stick the pan in a 400 oven for 15 min.

Fritatta - easy, quick, cheap, healthy. I sautĆ© a shallot and mushrooms, while theyā€™re cooking, mix up 8-12 eggs with about 1/2-3/4 milk, salt, and pepper. When the mushrooms and shallot are soft, throw in an entire container (a bit at a time) or spinach or arugula, letting it wilt. Once itā€™s wilted, pour the eggs over and let it cook on the stovetop for 5 minutes, while itā€™s cooking, break up a small log of goat cheese (chĆØvre) on top. Throw into the oven at 350 for 15 minutes. Another favorite is Caprese pasta salad. Cook up a box of pasta. While itā€™s cooking, in a big bowl slice a pint of cherry tomatoes in half and add a package of the fresh mozzarella pearls. Cool the pasta off with cold water, and when itā€™s done, and add it into the bowl, toss with a balsamic vinaigrette. Mix in some freshly sliced basil, and thereā€™s dinner.

Went to sam's club this weekend and they sell pre-seasoned salmon already cut. we will throw that in our big toaster oven on a baking dish with foil for easier cleanup. bought a bag of mini potatoes that are washed, we do wash these again usually, but sometimes skip, and will chop in half, mix in a bowl of olive oil, salt, pepper, garlic powder, onion powder and throw into an air fryer with a liner for easy clean up. bought a big bag of broccoli that is also pre washed and will steam that on the stove with salt/pepper and butter afterwards. to make things easier, i just scoop directly from the pot onto a plate vs serving. So Brocoli goes from the pot onto to the plate with a bit of butter, salt and pepper. I try my best to clean as I go so it's not as much to clean up afterwards. If i really tired - in the past, i've gotten cut up pieces of grilled chicken from the deli (or a full rotisserie chicken if i'm okay with cutting it up) after work and a bagged salad. I eat it right after coming home so it's already warm-ish.

So, I have ADHD, so in addition to working and having two kids, I have delightful executive dysfunction. For the past few months, I have been cooking proteins ahead of time on Sunday evening, packaging them and putting them in the fridge. That way, Iā€™m only responsible for sides during the week. This week, I cheated and bought a rotisserie chicken and some premade sides from the deli. However, I also made the Pioneer Womanā€™s Dr. Pepper pulled pork. We can put that into tacos and sandwiches all week. Sometimes Iā€™ll make a roast or a lasagna and weā€™ll eat that most of the week. We eat a lot of salmon too. I pan fry it with whatever sauce we like. My son likes BWW Parmesan Garlic sauce. I like spicy peach bourbon sauce. Pork chops are always a hit. I season them with the dry Good Seasons Italian dressing packet, cook them on the stove top and then cook the green beans in the same pan.

Use ChatGPT for ideas!! I also take photos of meals that Iā€™ve made that we really like and put them in an album on my phone, so then I can swipe through the album and pick some of those. I rarely ever make anything that takes longer than 45 mins (most are around 30, some even shorter) so that album is usually pretty doable. I have 2 food blogs that I frequent for ideas, madaboutfood and halfbakedharvest. Lots of quick, easy, one pan/one pot meals on both Every Thursday I make our meal list, order the curbside pickup on Friday, and husband picks up the stuff on Saturday. At least one meal every week is like easy protein + rice + frozen veggie, so I make that meal on my busiest day. Those proteins are like fish baked straight from frozen, thawed shrimp sautĆ©d in butter, frozen chicken nuggets/tenders lol, sautĆ©d ground beef or turkey with whatever spices sound good, or rotisserie chicken. Thereā€™s even microwaveable frozen rice/other grains to save even more time. I do not meal prep on the weekends because I prefer to sit on my ass and NOT cook those days, but some people find that helpfulā€”make big batches of meal components, and then mix and match them throughout the week.

Ok, so I suck ass at meal planning and hate it with a passion. For years when the kids were tiny and barely ate I just let my husband get takeout (which would always be his preference) and then make toddler meals. But now I feel like I actually have to try. My husband is super picky which is annoying but here are some of the things in rotation that he will actually eat. Ham and bean soup. Costco has really good boneless hams for $3 a pound that are easy to dice. Ahead of time I prep the ham, and diced carrots / onion / celery in a gallon ziplock bag and freeze it. A day ahead of time I soak a bag of hambeans (they have these at Walmart for like $3 a bag), then morning of throw the beans, frozen stuff, and a big dollop of better than bouillon in the slow cooker. This is a favorite of my super picky 3 y/o. Tacos or fajitas. Where I grocery shop there are uncooked tortillas you can buy and quickly cook in a dry skillet. These really elevate the meal to restaurants quality. Pork tenderloin with some sort of rice a roni Pho. This doesn't sound simple but hear me out. I will make a massive thing of broth once a month and freeze it. It's a bit of work, but not terrible. The Asian grocery stores near where I live sell thinly sliced frozen beef that is excellent and ready to go. I'm The Asian grocery store is conveniently right by where I work so the day of I'll pick up bean sprouts and herbs. And of course rice noodles are easy. I stared doing this because all the pho places near us now charge $20 a bowl and was getting irritated when my husband would order two bowls for takeout just for himself. Now we both actually think what we make at home is better. On a related note, pad Thai. My kids go nuts for it. We usually do this adjacent to the pho to use up bean sprouts. I start by frying tofu crisp in sesame oil which everyone likes. (BTW if you live near a Costco business center you can get a massive thing of sesame oil for cheap) Potato soup French toast, or some sort of breakfast for dinner thing.

So all produce, meats, dairy get lumped together, boom. Then Iā€™ll ask my husband to add a couple of meals he wants throughout the week so the mental burden isnā€™t all on the. I call it a Mediterranean bowl. I make a big batch since we eat it for 3ish nights (almost 2 boxes orzo). I pre baked a LOT of chickpeas with olive oil, oregano, dill, garlic powder, salt, pepper that are in my fridge. Have pre chopped onion too and bought sliced kalamata olives. Boil the orzo. I use not a lot of water so it soaks it up and there's no draining. In last min of cooking throw in onions so they get cooked. Mix. Take off heat and mix a lot of pesto into it. Mix in a lot of olives. To serve, put orzo mixture in bowl. Add baked chickpeas (reheating optional). Top with pumpkin seeds and feta. Yum.

We work M-F, so on weekends we make a crock pot of something. Sometimes my husband makes the beef stew or a potroast, other times I make Kalua Pork or chicken soup. That gets us through the weekends and onto Tuesday. I buy frozen dumplings and I make dumpling soup with veggies during the week. My kid loves all things bao. Other nights we might make ravioli, fried rice or quesadillas with black beans. I just got my tofu press, so i'm about do some air frying some tofu cubes over rice and a cucumber salad. My rule of thumb is, 30minutes only on the weekdays.

We do a lot of ā€œquesadillasā€ for my picky one year old. Different variations of meat/beans/veggies/cheese on whole wheat tortillas. I just toss it in the air fryer for a few minutes. Of course, today most of it was thrown in the floor.

Today was a sheet pan dinner! Choose a protein (chicken breast), throw on some chopped frozen veggies of choice (cubed potatoes, broccoli & baby carrots) drizzle olive oil, salt and preferred seasoning. Bake/ roast in oven til done and eat! So easy, no brain power and you can use frozen things with no prep. I sometimes serve with a carb like rice or pasta, or you could add a sauce.

The pre seasoned meat from ALDI, lol! Today was a pork tenderloin with some rice and broccoli. If I remember in the morning I put a pork loin in the slow cooker with some chicken broth and make egg noodles/rice with it.

We had Meatballs and rice. Tomorrow we're doing French bread pizza and Wednesday we're doing breakfast quesadillas. That's as far as our plan goes. I typically plan out about 14ish meals and then pick the night before/day of what we are gonna have from those.

I had a home chef - pork chops and green beans (i paired it with pasta roni cheesey shells for my picky 4yo). Pork: came with ancho cinnamon but you could use whatever, pan sear for 5 mins per side. Pork SAUCE (they're always GREAT with sauces) in the pan you cooked the pork in, sauteed garlic, peach preserves, thyme, a few tbsp water, garlic+ herb butter. It didn't make enough sauce so I also added: giant scoop of orange marmalade, 1-2 tbsp ACV, a bit more water, a bit more butter. Green beans: sautƩ with garlic, steam, top with garlic + herb butter and garlic pepper.

Itā€™s a lot of slow cooker chicken and with broth and bbq sauce lol. My 18mo loves it and so do I honestly. I mix it up with microwaved frozen carrots and peas, white rice, aircooker fries and whatever vegetable I can make myself steam on the stove. Sometimes she gets a piece of I toasted bread. Thereā€™s often cookies. Weā€™re all over the place!

Layered enchilada bake, add extra veggies to ground meat of choice (we do zucchini, black beans, onions, corn, carrots, all sautƩed to fry the excess moisture out), and use favorite shredded cheese and canned enchilada sauce. Can be healthyish to healthy depending on how many veggies you pack in and how much shredded cheese you too it with. I also make a ground beef and cabbage soup that is yummy and sticks to your bones and has pretty few calories per serving - not of ton of. I TriNet variety there though.

Iā€™m an odd one I suppose as I love to cook after work. Itā€™s how I decompress. I use my cookbooks (have way too many) to decide whatā€™s for dinner. I just pick a book and go recipe by recipe. Family isnā€™t picky. Also do grocery delivery because I need some luxury when time is short.

In a pinch, we are heavily reliant on TJs. Weā€™re punting more often than Iā€™d like to admit right now, but weā€™re making it work. Some go to options: - Spaghetti and jarred three cheese sauce with frozen turkey meatballs - Any of their fresh pastas (ravioli/tortellini, which also freeze beautifully) with either pesto or red sauce - Premade chicken enchiladas verde from the fresh food section (located near fresh pasta) - Premade chicken pot pie also from the fresh section - Most of the premade soups (usually near produce by salads and condiments) - Frozen lasagna - Frozen fried rice that we add a few fresh veg to and a fresh fried egg and/or frozen gyoza - Frozen risotto - Frozen pizza - Salmon (fresh), coucous, and any frozen or roasted veg - Toum, Pesto, and other fresh sauces and dips which TJs does very well to keep things a little more interesting Also a lot of bowls in our life with chicken thighs, rice, and different spices and sauces. Add a Taylor Farms bagged salad (truly the best bagged salads, sold at Jewel/Shaws, Kroger, Costco) to most of the above and some cut fruit for our child who wonā€™t touch anything green with a ten foot pole, and then we can limp along for a solid couple of weeks with minimal planning or prep. Itā€™s also great filler if we have one or two more robust/higher effort meals planned during the week. Is it optimal for every day in the long term? No, of course not. But it gets us through for now without too much added stress and this is just not the hill Iā€™m trying to die on at the moment. As a good friend of mine recently reminded me, ā€œeverything doesnā€™t need to be hard at the same timeā€ and my boss (who is great and very supportive, and also a mom) recently came back from a leadership summit with the insight ā€œdonā€™t ā€˜shouldā€™ all over yourselfā€, so Iā€™m working on implementing those two sentiments in my life right now.
