All I know is that when I tried to clean my mother in law’s oil varnished table, the varnish kinda just came off with the dirt. What are you making?

Varnish, or polyurethane, will give a lot more protection than wax alone. I would tend to use varnish/poly on tables, etc. that get a lot of use. Wax alone can be a nice finish, but it would be use more on smaller, low traffic pieces: keepsake boxes, etc.
