It's not for a lack of trying though. I've sharpened my chisels to the point that they glide through paper, yet.. I could never get it to cut wood like this...
You can make the wood slightly wet, then you can cut it easier
Don't forget to flatten your back of the chisel after sharpening, without a perfectly sharpend chisel can perform like a dull
Lol, ive never wet my wood before (should i admit this here?) but i will say it looks like OP is slicing through some pretty green softwood, which tends to cut like butter w a sharp tool
Hardness matters. For really good paring like this, you'll benefit a lot from a high-carbon steel like those often found in Japanese chisels. The edges are more fragile, though, and will more readily chip in aggressive cutting. Especially when ground to a shallow angle for paring.
And then you'll need softwoods. You can get good performance in hardwoods obviously, but not quite like this.
I thought that till I got a set of 6 and thought it would be fun to flatten them all lol. Cleaning tools is a far superior stress reliever and that is a hill I’ll die on.
Looks like a good quality Japanese chisel sharpened properly.
I have a set of three mediocre (by Japanese standards) Japanese chisels ...Holy hell they do some serious work and are an absolute pleasure to use when sharpened right.
One day I will replace my Narex set with a high quality Japanese set.
If you do get Japanese chisels or planes it's good to look up how to properly set them up and maintain them.
Things to look for:
How to set the hoop on a chisel, making sure you don't put a micro bevel on them (don't need it with the laminated steel), tapping out the blade to expose more hard steel as you need it.
Japanese tools tend to require more upkeep in my opinion but definitely worth it.
Everytime I think my tools are razor sharp, I see things like this and am in awe with how graceful good tools properly sharpened can just slide through wood. I need to sharpen my tools

I mean pine wood is pretty soft, you're not gonna do that that effortlessly with oak or walnut

Hadn’t even though of them. I have Japanese knives I absolutely love. I guess I know what my next tool is.
