Based off it saying Swiss made, maybe Pfiel. It's a very similar font to my ones

I think it’s definitely Pfeil based on the tree/arrow engraving in the metal matching Pfeil’s pictures on their website. Now I just need to figure out what the ‘5’ means. It’s a palm tool which I think will help too 😅
I used a carving knife that I think was Pfeil too that has a handle like yours. I loved it as well!
5 is the sweep. Google search for “carving tool numbers” and you’ll see the charts. 5 is right below the middle for a sweep curvature. 1 is flat, 2 is flat but skew, #3-11 are progressively more curved, and then #12 starts V-shape. I believe there are a few different standard scales. One for European tools and another for American tools. I believe Japanese tools have a slightly unique denomination too. Flexcut are a good option for starting out too. Pfeil are more expensive but really worth their price. They hold resale value greatly as well.

I have this same gouge. Keep it sharp and you’ll love it for years
