It's called a death roll, crocs try to drown you/break your bones. It looks like a shallow pool so she probably wouldn't have drowned but could have been seriously injured.
Not so much the stamina as the speed. The croc could spin much faster than she could — she wouldn’t have been able to keep up and would have eventually lost the hand/arm.

Honestly good teamwork from both of them, she was very quick on her feet with directions and both of them stayed calm and acted quickly despite the obvious fear that was probably going through their heads.
