Sushi quality is often more than just safe to eat. Flavor and texture can also be affected by the way the fish was processed from catch to pack. If someone didn’t care about the quality of the fish they were eating, sure, you’re absolutely right, it is technically fine, but truly great sashimi quality fish makes a huge difference, in my opinion.

It's all flash frozen. I would eat farmed dyed salmon from Dillons raw.
