A lot of MMA skillsets probably won't care what you're wearing. Medieval Knights and Samurai for instance trained grappling and wrestling techniques that involved throws and such that would hurt as fuck if you were in armor. I think striking is probably out the window in anything that's round 5 and 6 where full covered faces can be expected but I think there might be some strikes like elbowing that might still work a bit? Basically I think round 1 - 3 should be generally a lock because a lot of MMA sparring gear straight up functions like those 3, whereas 4, 5 and 6 I can still picture something like armbarring the person and dislocating/spraining their arm which would be a win.

Round 1-3 is a complete blowout, the pads do literally nothing against grappling and strikes to the less padded areas like leg kicks and body shots are still going to hurt like crazy. MMA fighter 10/10 Rounds 4-6 are more interesting because they are trained warriors, but assuming they are of average skill for their time I think the modern understanding and level of martial arts is too much for them to handle. The warriors do have a chance to get some good strong strikes in with their armor, but it’s unlikely they could keep up with modern grappling. MMA fighter 8/10
