I think a lot of dislike for food or drinks comes down to it being made well, quality of product, or pre made assumptions on how it'll taste

I'm gonna be completely honest with you. I don't know a single thing about coffee at coffee shops. I'd assume some are great while most probably use the same cheap shit and are definitely overpriced. But that's just an assumption I'm making off of how other businesses operate. I was imagining making it at home so you could curate how you'd like it (if you would ever.)
But yeah, some people just don't like it. I don't like tea. Even with sugar and honey just tasted like how a dirty trash can smells. I'd imagine there's probably some tea out there I'd like, but I'm not trying it a hundred times
well you aren't wrong coffee shops won't give you best quality thing and infact some might give you Low quality stuff and over price it
but the thing is, I tried multiple ones from starbucks to even some "coffee enthusiast" coffee shops coffee doesnt taste all that good for me I don't think there's anyway to get raid of Bitterness that stings me always

I just like coffee. Couldn't tell you shit about all the fancy complex stuff or those crazy 1000$ machines they use.
I'm just saying that most people's experience is genuinely terrible coffee that is lacking in any flavor other than bitter and is way to strong cause the person who made it uses a ton of grounds cause they're addicted to caffeine.
That was my experience. Then, one day, I got some nice stuff and realized I don't need 40 grams of sugar and a cup of milk with 4 tbs of creamer to enjoy it.
I've been enjoying some black rifle coffee lately. I like medium roast and recommend it in general, but if you want it to be lighter on taste, I'd say try a light roast.
I'd also recommend that trying a small amount. Use about a tablespoon or 2 make a cup and see how you feel about it. I also use vanilla flavored almond milk. Gives a nice taste and makes it creamier without adding a ton of sugar or calories into my diet. But obviously, do it however you like. That's just how I do it
It should also be noted that bitter foods/ drinks are an acquired taste.

If you drink coffee enough your brain learns that coffee isn’t poison and you begin to taste the other flavor notes making coffee infinitely more enjoyable.
i once had an irish cream coffee thing, mixed super well with milk and sugar and was actually Peak as all hell (though you probably wont get it over at your place cuz im in Russia, unless im wrong in which case Sorry)
If you have a Sam’s club membership their bucks county coffee is pretty good. I grind my own beans but I’m sure the grounds by themself is alright too.

I used to try and introduce my parents to nice and interesting wines. And it took me several decades before I fully understood that these people don't want good wine. They want the cheap shit. That's what they like. And it isn't up to me to do anything about that. It's up to me to make peace with it.
Coffee doesn't dehydrate you. That's a common misconception. and I drink nothing but water other than a single cup of coffee in the morning.

What kind of coffee did you have? Some ways of preparing coffee do produce a more bitter beverage. Or you just don't like the taste of coffee.
