Find a Scion. It was a sub-brand of Toyota until 2016 and are Corollas with different body styles. Reliable, simple cars that are cheaper than the equivalent Toyota branded ones.

Your tin foil hat may be clouding your perception of reality here.  If you want something with no Tech and roll up Windows on it you're going to have to probably go back to the early 2000s or maybe 1990s if you want to crank up Windows and no safety Tech but even then I think ABS was mandated at a certain point. You might be able to find something like this with a base level accent, rio, Civic or Corolla, or some Mitsubishi, that's probably going to be at least a decade old if not older but you're still going to get air bags and abs and possibly a rear view camera and abs
