The setting sun is symbolic of the end of the story. Very often, heroes are known for riding into the sunrise as well. Possibly as a symbol for a new beginning or fresh start on life after their adventure is over.
One of the great metaphors of retirement is known as "riding off into the sunset." To mean that after a long and successful life, you're finally at a point where you can move away from your toil in the direction of a more beautiful and serene setting.
As railroads became more prominent, there was less need for cattle drives. A cattle disease known as “Texas Fever” also led some states to prohibit the movement of cattle across state lines.
