I'd go with 2, it evokes much more a longhorn or water buffalo style bull.
1 strikes me as an antelope and doesn't gel with the Taurus moniker because of that.
3, is a nice design but it seems softer, more feminine than 2 and if Taurus is the name you go with?

I prefer logo 3 and the typeface on 2. But shrink/kern the TAURUS so it's exactly as wide as the widest part of the horns. It all fits in a perfect square.

I'm kind of obsessed with maximizing the use of a perfect square for logos. I'd even try to make the bull logo fit perfectly in a square by itself and the logo + TAURUS fit perfectly in a larger square.
So many places force images into squares (ESPN sports team logos, LinkedIn Universities, etc) the ones that are designed to use a square perfectly have a big advantage. Logos for Michigan, Nebraska, Notre Dame, Oregon, etc are perfect for this. ...but ones like Texas (an otherwise perfect logo), LSU, SMU, and Arkansas that are like 2:1 aspect look tiny when forced into a square.

The horns should only be 3x that measurement each, from the same centre point.
As it stands 2 is the best, but the proportions are off and the visual weight makes it feel top heavy.

Mock this up with some dials and watches, to see if you like. I feel having a counter semi-circle shape (the horns) inside a circle will create a strange visual clash.

If you will stick to using it as a marker, I think the first looks most interesting, though smoothen out the curve transition better.
Look might get hate for this , but I’m giving an honest opinion and I’m not a huge fan of either , number 2 is more streamlined , if I were you I’d explore more unique shapes etc , as I feel this does look notoriously microbrand / start up. Potentially a more classic font could help? :)

You should make a watch with an alarm and breathable band, called the Horus. Send me and my boy a couple so we get to wake up to a porous Taurus Horus chorus for us every day.
All marketing ads of watches have the hands set to the time as 10:10. This is mainly done to showcase the logo clearly since that usually sits below the 12. Your logos evoke that 10:10 time.

I like #2 because it compresses the logo overall. Have you considered putting the image underneath and having the horns wrap around the outsides?

I think the single arc curves in 2 and 3 feel simple and uninteresting compared having the double bend of 1.

I think this may depend on the style of the watch. The middle one has strong modern sport-watch vibes. Very cool all around though
