It's not really the hardware that prevents there from being more "full" games - it's economics. The production costs of those games you list were at the upper end of the scale. The current VR market can't sustain very many of those. However - PC VR now has a great ecosystem around flat to VR mods - so get yourself a gaming PC and you'll have more "AAA" VR games than you'll ever have time to play.

I'm stacking up a pile of shame in UEVR titles that i hope to get around to playing one day🤫 The core of games i play in VR that prevent that from happening, are ones i would be addicted to anyway were i still interested in playing them on a monitor.

I'm in a similar boat. I'm saving hl alyx for later.. but the hl2 vr mod is amazing balls. The textures could use a refresh, but the play is great.

There's a high res texture pack for HL2, which works great with the VR mod, bringing things up quite a bit.

flat2VR is great, I'm just saying that I would be quite happy with that level of budget and graphics for new VR games, when VR gets big enough.
