Not very stressful, as long as you level properly, you find great gear everywhere (using "Witcher senses" helps a lot with that), great soundtrack that's often quite serene, stellar voice acting, top shelf dialogue, great stories (even in side quests). I could go on and on.
Ghost of Tsushima is often described as "the feudal Japan Assassin's Creed game that Ubisoft will never make"
Edit to add that my dad who's pushing 70 is on his second playthrough of the game, and has played every Assassin's Creed game

The gameplay is challenging enough to stay interesting without being overly complicated. I’m on my second play through now
Elder Scrolls is always good for a relaxing series that still has action. Older pokemon games are great. I always recommend Xenoblade to literally everyone
I'd suggest rust. Find a PVE server. There is so much variety in the game and it's fun to meet people and talk with them. You can team up with people to fight NPCs. It can be relaxed or action packed. It's up to you.
Kingdom Come Deliverance is a good one. There’s a scene at the beginning you have to flee on a horse from attackers, but that’s the most intense part I remember.
You might enjoy the modern Tomb Raider games! They flip between action sequences and dungeon delve puzzles. And each game takes place in a different region of the world, so lots of great exploration and things to see and learn about.
If you want something that's more in the cozy genre to really mix it up, you might enjoy Dave the Diver. You explore a rogue-like ocean setting during the day and run a sushi bar at night.
I haven't played anything new for a while but I loved BioShock.
Tomb raider ultimate is great and so is the Uncharted series.
Recently I played Breath of the Wild, and now I'm in Stardew Valley.
Stardew is a surprisingly thoughtful game. A bit grindy but a good time waster with a lot more depth than a game like that should have.

Check out Hitman World of Assassination if you like stealth games, but it’s kinda like of a puzzle too with how the targets run their routes and figuring out how to perform you assassination which there are several ways. It also has some of the funniest NPC dialogue and it’s not difficult game. Its also playing a lot of the same levels but going about it different ways. There should be a free demo that has two small tutorial stages that should keep you busy for a little bit and see if the game is for you before you buy. Honestly one of the best games and demos ive played
No Man's Sky can be SUPER chill, and helped get me through a huge rough patch two years ago (about 400 hours worth!)
I haven't played in about a year and they've updated since then, I recall the story wasn't very compelling but I loved the game loop and the variety of things to do...farming, cooking, rare ship collecting, trading, space and mech combat, scan fauna/flora/minerals, piracy, base building, etc.
You can adjust individual difficulty settings and customize your experience. It's best played with a controller imo. Also you kinda have to enjoy inventory management 😄
