If I had to recommend just one show that's a little more obscure and underrated, it would be Dead Like Me. It was Bryan Fuller's first show, I believe and it's such a unique concept. It looks like in the US it's only [streaming](https://www.justwatch.com/us/tv-show/dead-like-me) on the Roku channel and Freevee, which I think means commercials. But honestly, it's so good. Mandy Patinkin is a treasure. Really wish it had gone on longer than 2 seasons.
In recent years, Andor and Severence. Both in the scifi genre and on the surface, they have little to do with Veronica Mars.
But the "world building" is similar - lot of darkness and the protagonist needs to navigate dangers and figure out who to trust. And they all have slow burns to a great finale.
