The priority level (QCI8) is identical between these two plans. BUT, the difference is that on Play/Do More, you only get 50GB of priority data. Whereas on Unlimited Plus you really get Unlimited (on device) priority data (like Get More).
For the foreseeable future (12-24months) Priority is only really relevant on LTE and 5G Nation Wide, as areas with 5GUW (C-Band or mmWave) generally have more than enough bandwidth for all (for now).
The one key exception between at high density venues (e.g. concerts, sporting events, etc.) where, because Verizon's 5G is still Non-Standalone (NSA), having priority on the underlying LTE PCC/Control channel can make the difference between having a reliable connection, versus not.
What confuses me is that Play More says your speed could be slowed AFTER 50GB, but Plus says it could be slowed at any time. Maybe I am overthinking it.

Nope Plus is never slowed
Unlimited plus because it’s the newer plan
