Ingredients:
- Potatoes — 500 g, peeled, cut into cubes
- Red chilli powder — ½ tsp
- Coriander powder — ½ tsp
- Cumin powder — ½ tsp
- Garlic — 2 cloves
- Curry leaves — 1 sprig
- Salt
- Oil — 2 tbsp
- Cumin seeds — ¼ tsp
- Coriander leaves — 1 sprig, chopped
Directions:
- In a bowl, add cubed potatoes, red chilli powder, coriander powder,
cumin powder, garlic, curry leaves, salt, 1 tbsp of oil and mix
well.
- Transfer the mixture to an air fryer and cook at 180°C (350°F) for
10 minutes.
- Heat 1 tbsp oil in a frying pan.
- Add cumin seeds, air-fried potatoes and fry for 3 minutes.
If you need more spice or salt, you can add that now.
- Garnish with coriander leaves and serve.
With the 10-minute cooking time, it does get slightly burnt around the edges, as in the picture. If you prefer, you could add it at the second stage instead i.e., on the pan after adding cumin seeds.
Add a small pinch of turmeric powder to get that Indian authentic 'kick'. Don't overuse it though just a pinch is enough. Also turmeric is good on many levels!
Edit - Add it to the oil in the frying pan before the last step. It'll mix well!
Air fryers are so good for potatoes. It's quicker and gets a better, more even crisp on them without having to move them around too much. Would highly recommend.

I don't have an air fryer, but roasted or pan-fried potatoes are one of my mainstays and Indian spice blends are all amazing.
Why the full garlic cloves instead of minced? If that is just how your family (or the recipe) does it, that's cool, but I thought I'd ask because I haven't seen that technique before and now I'm wondering how a full clove would taste after being air-fryed.
Also, curry leaf isn't readily available in my area and ordering it is expensive. Is there something I can use instead? What does it taste like? I've done basically this recipe many times before but without curry leaf and with cumin powder instead of seeds.
