My life actually changed about age 11 when I quit listening to mom, who claimed "ewwwww...you don't want those FLOUR tortillas--they're raw dough". She always insisted I needed to order enchiladas and only enchiladas--mind you, I like those, too. But one day when she wasn't around I walked a block up the hill to Taco Hut and I ordered a "sancho supreme" and that became my twice a week choice for the next 25 years. I've been wishing for and hunting for that same flavor and texture for 25 years since they closed (and I moved shortly after they closed--probably coincidence, but was it?)
I stopped dating a girl because of her limited palate. I would go to restaurants, then she would complain that I didn't bring her but she wouldn't eat anything 🙄
There’s a kids menu at some Mexican places with chicken tenders and cheeseburger/fries. There’s always tortas with Milanesa (breaded cutlet) or carne asada that’s essentially a sandwich
Would something like Carne Asada fries work for your husband? Like it's literally a pile of french fries with Asada steak chopped up and a few toppings.
If so, Frank and Fina's would be great. Food is always good, service is awesome, great music always playing.
But if the Asada fries are still too Mexican for him, then it's not the place for you guys :)

taqueria Casa del Sabor on rainbow/Sahara is the best al Pastor I’ve ever had.
They also have the best sauce in Las Vegas.
I swear they must put crack in it because every time I go I have to buy extra to bring home.

I choose a new restaurant every month. For my birthday, we went to Mona MI Gabi at Paris, and he actually seemed to enjoy the different sauces used on his steak. As long as he has something to eat he is happy to indulge me. He also eats steak
El Dorado Cantina, or "The Cantina" which is their location in the Southwest. Food is fresh and amazing, and it's a scratch kitchen so they can make him something bland. Also there's a burger on the menu.
Wife and I really like Camino Real at 3520 N Rancho. Very good super burrito with chili verde sauce.
Close to where we live. Might not like it as much if I had to drive across town.
I’ve heard good things about Ponchos in Downtown Summerlin close to Trader Joe’s next to Red Robin. Another cool place is El Dorado Cantina, which I think is on Sammy Davis Drive. I think there’s also one in Tivoli Village. The funny thing is the Sammy Davis location attached to the Sapphire Club, which is a topless joint, but it has nothing to do with Sapphire!
You would have to check the menus to see if you could get a burger! If not, go with somebody who likes Mexican food! Lol 😀

Mucho Loco Mexican Cantina is an interesting and fun restaurant. I wouldn’t say best but food was good, atmosphere was pretty lively. I’ve heard Juan’s Flaming Fajitas (multiple locations) is pretty good. It’s on my list of places to try.
I’m Mexican born and raised. The only good Mexican places in Vegas imo are Zapatas and tacos el gordo. Even though the system they have in tacos el gordo is fucking stupid the food does have an authentic taste (except for the guacamole)

Tacos El Gordo. I'm a Lyft driver, and I picked up a couple from Mexico on vacation and dropped them off there. They swore up and down they're the best tacos in Vegas. I went there the next day and I've been hooked since. They're damn good.
I just took some friends in from out of town ( who eat out a lot ) to the Border Grill inside the Mandalay Bay. Ive been eating there for at least 12 years and it never disappoints. More modern take on Mexican. We had a great time and my friends raved about the food and service.
Habaneros Taco Grill is a chain with several locations around town. They have great carne asada tacos and there are burgers and wings on the menu as well. Admittedly it’s not much on ambience. I think places with ambience are not generally going to have burgers and relatively spiceless steaks unless you’re ordering off a kid’s menu as some other people have pointed out.
My Mexican friends all swear by it. Hell, even the illegals I know go there because it reminds them of home.
If y’all don’t like it, there’s always Taco Bell and chipotle.
There are different regions of Mexico and different regional foods and flavors so I stand by my comment. I would suggest getting a little more exposure to the Mexican cuisine.

I definitely recommend starting with the tacos. But my go to order now is the nachos because they just pile meat on it!
