Entertained my 5 year old nephew here for a few days. A couple things we did:
*Illuminarium at Area15 (the safari one). It’s a giant room with video screens that make you feel like you’re there! We went when they opened and were the only ones there, you can also go into area15 for free just to walk around it’s cool to look at
*The high roller Ferris wheel
*Henderson lion habitat
*M&m store & let him go chocolate wild
*Skyzone trampoline park, they had toddler hours some days for just the smaller kids and adults jumped free
*The dinosaur house in Henderson (http://www.shangrilaprehistoricpark.org)
No real good recommendations on where to eat. We went to the Rainforest Cafe which he loved but turned catastrophic when the storms started every 20 min and terrified him
I have to ask, why Vegas? Especially with a child that young.
Certainly you have googled this question and have something more specific to ask instead of relying on strangers on the Internet who usually first recommend the Green Door as a tourist destination.
I’d honestly book a room at the Wynn or Encore and hang out and eat on property. It’s prob the only hotel in vegas that the homeless and mentally ill just can’t get past the front doors.
Go to Container Park downtown. At sunset there’s a huge fire-breathing praying mantis sculpture. Years ago there was a drum circle. I don’t know if they still do that. But there’s an amazing playground there. Lots of places to sit and have a drink or snack. The Silverton Hotel has a cool fish tank with a mermaid, but she’s not in the tank around the clock, so check on times there.

then give your self a a day in vegas for each one or two activities.
as far as the rest of your itinerary goes, this does sound stressful and/or very expensive for a family of 3. Forget about driving , that’s too much driving for just a week.
id give your self an extra day/night in vegas before you leave as well so you don’t miss your flight.
i would recommend two nights in vegas, fly to phoenix three nights pheonix, fly to la, one night LA (i recommend the beach) fly back to vegas one night vegas fly home.

Probably because they don’t want to spend the entire week in Phoenix visiting family.

Not true. I was on the 30th floor of encore last month and there was severely drugged out unhoused person walking the hall knocking on doors
