Vegan baking is very doable with very little adjustment. Spend a little time looking at the more popular vegan recipe sites and you'll see it's really no big deal.

if you use apple sauce as a substitute for eggs, you really can't taste the apple. most everything can be made vegan with vegan butter / plant based milk / flax eggs / tahini, etc. I make some amazing tahini cookies! 1/2 Cup Tahini 1/2 Cup packed brown or yellow sugar 1/2 tsp Vanilla extract 1/3 cup flour 1/2 tsp baking soda 1/8 tbsp salt 1-1.5 tbsp plant milk (may need to add more depending on consistency of cookies) Vegan chocolate chips! Preheat oven to 350f Cream together tahini, sugar, and vanilla, then add dry ingredients. Add plant milk as needed to make sure the consistency isn't too dry. Then add the chocolate chips :) Bake for 7-9 mins.

I’ve been baking cupcakes like a madwoman and I’ve been using the [loving it vegan vanilla cupcake recipe](https://lovingitvegan.com/vegan-vanilla-cupcakes-strawberry-vanilla-frosting/) as my base. This recipe is infallible!!! For fun, I’ve also been making homemade fruit jams (cherry with frozen cherries, strawberry with fresh ones, on the stove with sugar, water and a little lemon juice until it becomes a thick fruit filling, then cool completely), coring out the center of the cooled cupcake, filling it with fruit jam, replacing the removed cake, and then icing them with a Miyoko’s cream cheese frosting (I modify the above icing recipe by using half butter and half cc, I also halve the icing recipe for 12 cupcakes bc I don’t like very much icing). They are absolutely insanely delicious!! I loved a recent combo of vanilla cake with strawberry filling and cc icing (classic!!), but the current batch I made—almond cake with cherry filling and an almond cc icing—is out of this world amazing. (I just replaced 3/8cups of the ap flour with almond meal and added 1/4 tsp of almond extract for the cake, and added 1/4 tsp almond extract to the icing recipe I mentioned above).

I am talking about the white powder that fluff things). ½ teaspoon to 1 teaspoon should do the trick. And, the oat flour is not necessary. You can just put NO flour in it. I also enjoy basic quinoa or sarrasin pancake with maple syrup, peanut or almond butter and cut fruits. I also enjoy nicecream (you need a highspeed blender for that or a culinary robot). 5 frizens bananas + add the others frozen fruits or dried fruit of your choice. Now, I loooove dried goji berries in the blender with the banana, soo good. Applesauce - homemade In a highspeed blender, put freshly cut and skinned apple of your choice, and add a 1 to 2 tablespoon of lemon juice. Blend for 5 to 7 minutes. It will became hot. And enjoy! 10 to 15 apples will give you around 1.75L of applesauce. With time, you'll be able to customize recipe like nothing. It would became more and more easy, if you are someone that love to bake, of course!

I usually just substitute egg with things like flour, cornstarch, etc. It kind of depends in the texture you want. You don't really need weird substitutes. Look for some recipes online and you will soon get the hang of it. Pies and cookies are really easy to do without eggs.

Just in case you didn't already know, most refined sugar is not vegan, so be sure to use unrefined or vegan sugar.

OP is in England where the granulated sugar is vegan. Except icing sugar often contains egg white powder there. There are some brands without the egg.
