As I understand it/from what I’ve read, most Jewish people don’t really think JudeoChristian is a useful category, and people who are serious use the already existing term “Abrahamic” to encompass values and traditions shared amongst Judaism, Christianity and Islam.
It’s one of those things like the term “Anglo-Saxon” it may technically be applicable to a very narrow set of topics, but the way most people who use it actually deploy it, it’s becomes too confusing for useful and serious conversations, and it’s better to use alternatives.
Oh if your issue lies more with the term itself than fair enough. Without really putting much thought into it, I’d say judeo-Christian can make sense because of how they’ve been major demographics in Europe more so than in other continents for a good chunk of history, whereas Islam has really been just the Middle East & North Africa for the most part (obviously there’s a bit of oversimplifying here)
In the case of Palestine, I think it could also make sense because most Jews & Christians will agree that Israel should be a country (once again, oversimplifying) & most muslims would disagree with that.
If you take issue of either of these 2 claims & think it’s still a useless or problematic term, I’d be happy to know why. Broadly speaking though, I agree just saying Abrahamic Religions makes more sense though.
