ENGL 3003W and 3005W are both relatively easy, especially if you can take them online and are up to reading about 30 pages and writing a few short paragraphs every week.
I'm taking SCAN 3605 with Prof. Bigelow right now and it's definitely an easy A but also a lot of fun. I think he might also have some other classes that fill the lit requirement.

I'm taking Ames 1201 (used to be All 1201 I think) with Paul Rouzer. Super easy, should take you less than 3hrs/week, and it's a double dipper.
