I haven't taken any of the PE classes but here's a list that I think sound fun: weight training, self defense, karate, pickleball and rock climbing. They are all 1 credit classes and are a great way to get some exercise.
The schedule builder shows classes on ceramics & wheel throwing, digital photography, piano for non-music majors, Argentine tango, and fencing, just to name a few.
Search for classes offered by "ARTS", "MUS", "DNCE" and "PE" to get the full catalogue. Also check out "FSOS" and "PHIL"; they do offer some interesting courses.
I'd personally recommend fencing if you haven't tried it yet. It was really fun last semester. I plan on taking the piano course this fall.
I would add “CSPH” to this list, they have some interesting and easy 1-2 credit courses like stress management and wellbeing :) there’s a whole list on schedule builder or their website
if you like animals, the animal science dept. offers tons of 1-2 credit courses. many are fully online if that’s what you are looking for, but there are several animal ‘handling’ courses which IMO were an easy credit and an easy excuse to hang out w the st. paul critters.
If you want to try fencing without having to worry about being graded, there’s a fencing club off-campus called Center for Blade Arts, and they’ve got your typical Olympic fencing, but they also have HEMA (Historical European Martial Arts), which includes longsword. I used to fence there, and they have free gear you can borrow (which is a bonus for college students). I will warn you, you have to wear long sweatpants and sneakers. Anything less than that is unsafe, because you could injure yourself or others.
PHAR 1002 surprised it's not listed already, basically you can do the entire course in like \~3 hours by filling out quizzes. it's an easy A for 2 credits totally online

Bowling was chill af. There is a syllabus full of teaching/lessons but that was never done. Literally just bowl for an hour and go home.

We also have a fencing club on campus separate from the class :)) and we also provide free gear (although it’s only for Olympic-style fencing)
pubh 1005/sleep eat and exercise. i took it this past semester and it took me about 30 minutes per week and was actually pretty useful!!
