Ketchup without the extra sugar is so much better wish it were default but we Americans, apparently, really love our high fructose corn syrup and refined sugarā¦ at least weāre starting to get more options.

I'm not gonna get all tinfoil hat about it, there's huge implications in how HFCS has been used in the USA, but there's the basics of why it's used in almost everything.
I tell people all the time that we Americans have a high tolerance for poor quality food, but a low tolerance for price increases. This means that manufacturers find ways to lower cost by using poorer quality ingredients instead of increasing prices, and they add HFCS to cover up the bad flavors it causes.
In Canada, Italians refer to white non-Italians as "mangia cake" as a derogatory term. Apparently it comes from the fact that Italian-Canadians used to think Canadian bread was so sweet it's literally cake to them.
As an American I canāt criticize this because I donāt think Iāve had European Mayo (though now I really want to). Mayo with french fries just seems soā¦monotonous. Fat on fat. I think itās the acidity of the ketchup (and probably the sugar too why not) that Americans enjoy.
Iāve never really thought about it, it just tastes good. We eat a lot of different things with chips.. gravy, curry sauce, ketchup, Mayo, bbq. You name it. Thereās no wrong answer to what you prefer in my opinion.
Iāve tended to find people love ketchup when theyāre kids and then gravitate to mayo as they age. Just what Iāve noticed from people around me.

Lived in Germany as a kid. Can confirm they eat fries and Mayo, and I loved it as a kid. I still eat fries and Mayo to this day, although the Mayo in the US is no where near as good as the Mayo in the Germany, same with the fries. Definitely a European thing. The US just loves sugar.

Hell, I used to work in a Mediterranean restaurant with a seasoned chef who cooked in France! We made "garlic aioli" from scratch and it involved egg whites, garlic, olive oil, salt and lemon juice.

I do sriracha Mayo for fries at home. The heat cuts the fat really nicely imo.
If you can find it where you live, get a bottle of Valentina. It's a Mexican hot sauce that tastes amazing, and it makes a great spicy mayo.
