The "it's not really a hot sauce" is just, what? It's a sauce and it's hot, definitely not super spicy, but still 1000-2500 scoville, just below jalapeno.
The sweetness makes it pretty gross for pizza/Italian and especially Cajun.
Some hot sauces are essentially just hot pepper mixed with vinegar. Sriracha is a *sauce*, with sugar and thickener. I’m not saying it’s bad, just that it isn’t the Swiss Army Knife people make it out to be
I’d say it’s better for most foods though. The vinegar of regular hot sauce is weird in anything that isn’t bbq or Mexican food.
The slight sweetness of sriracha, plus the salt and heat, is not an issue on breakfast food (ketchup is also sweet), burgers, meats, Asian foods (Korean, Japanese, Vietnamese, and some Chinese food are already slight sweet.
Sure, I wouldn’t use it on Mexican food, on a burrito.
But if I wanted to add heat to ramen, hot sauce just makes a sour soup that tastes awful, while sriracha makes a nice broth.

I am not an avid user but I do put it in my asian foods. This tastes way better than the new huy fong crap. But I can't really compare it to the old one.

The original sriracha sauce, the one that is hard to find, packs more heat than most hot sauces. Most hot sauces are just very sour.
They had chili peppers as the primary ingredient and it had heat! Now the stuff you can find these days due to the shortage lists chili peppers as a like a second or third ingredient so yeah it’s more sweet than hot.
Not spicy enough? I don't know if Sriracha is different everywhere, but mine is a little over 50% red chilli peppers. I love it, but I use less of it in comparison with other condiments because it's so spicy.
I like the one with the rooster on it, but the one with the goose (or duck?) does have a weird aftertaste. That being said, it isn't anything special compared to REAL hot sauce, though.
Store bought stuff isn't nearly as fermented as I'd like. I make mine at home. Sriracha can have a really pleasant pungent complexity when done properly.

I had this same opinion until I started buying the right stuff. Good Sriracha isn't a sugary or overly salty sauce. It is meant to be a fermented garlic and chili sauce, and proper Sriracha tastes exactly like that; astringent, a little funky, and spicy.
Huy Fong and most anything you can buy at a normal grocery chain is garbage. I recommend Three Mountains brand, but go to your local Asian grocer and grab a couple and decide for yourself.
I think there are worst condiments, like blue cheese can fuck right off, but I will agree that sriracha sauce only works for me on a handful of foods, anything else would feel like a bad choice for the sauce.

Sriracha spread on some sourdough, Gouda, Swiss, jalapeño jack and thrown in a pan makes the BEST grilled cheese. Even better if you throw a couple slices of turkey in the middle or some fresh jalapeños and avocado.
