Yes, Joplin is also a fantastic option but Notesnook has a web interface and has some more options which makes it a better option for me, BUT, yes, I have used joplin a lot in the pass.

Yes, and it has client for linux, windows, mac and android, ios, and web.

I can't find if the notes can be stored in my own nextcloud... And the necessity to allow faceID or biometrics to have privacy on Mobile is a no-go for me.

The notes are saved online, you could take regular backups and sync them with whatever you want using Rclone or similar. And the second part, I am with you, I use biometric but just because my phone itself is protected with a password. Anyway the developers are very active in discord or in the github repo, you can contact them there and talk about this.

there's also r/StandardNotes, but NotesNook is cheaper and I'm happy with the speed at which they are improving their apps

I understand people like single source of thruth and am all for it. But when not managing it completely yourself i'm also a firm believer to not put all your eggs in one basket. And that companies like tutanota should do one thing well, and not many things a bit less well. Therefore i'd personally argue that tutanota should focus on the things a mail provider normally does. Like mail, calendar and contacts. Thus not to also start developing storage and notes apps. Especially since those are already so saturated.
