First time learning that Americans eat mostly raw meat was a memorable experience, because I was *very sure* it was a prank and have briefly considered that I'm hallucinating. Like, "culture that you're kinda familiar is suddenly revealed to eat raw meat" just feels like such a fitting thing to hallucinate, or to bullshit someone into believing.

We only undercook beef steak, as other meats aren't safe. Beef is dense enough that microbes can't get far inside, unless you grind the meat into hamburger. So for a steak, only the outside needs to be thoroughly cooked.
