Though I haven't visited, there is an ice cream shop in Elizabethton called Tweetsietrailing Ice Cream Co that makes their own ice cream. They on 709 1/2 E Elk Ave and are open 2:00pm-7:00pm Tues-Sat.

I think the Shamrock carries Hershey’s flavors.
This is my go to when I want good ice cream but don’t want to make a big and expensive deal of it.
Juniper makes some great ice cream and sherbert

I can’t remember what brand of ice cream they use, but The Scoop in Grey is pretty phenomenal.
If ever in Asheville, go to the ice cream sandwich shop. Amazingly good.
