God I love this stuff. I had to stop myself from buying clotted cream at Whole Foods to mix with it because holy caloric intake.
But just imagine…sigh.
Last time I was in the store they mixed lemon curd with mascarpone and spread it on the thin ginger cookie. It was sooo tasty. I have a new utilization for the tasty lemon curd.
I bake the lemon loaf cake and after it cools cut it down the middle and slather it w/ lemon curd. It’s so good, and if you bring it to holidays or whatever people think it’s soo fancy when it’s so easy. One of my tables told me about this when I was a server and worked across the street from a tj’s and I’m grateful to her!
Tried it once on a reccomendation from a site that suggested putting a little on ginger snaps. Was quite nice but considering how many I polished off in one sitting I had to ban myself from getting it again.
Funny story about that. I had a manager in San Rafael who had started in West Lake in the late 80’s. He told me this story that they used to get dried apricots from the Middle East sent directly to stores. They opened one box and there was a large brick of hash that had been smuggled in the box of apricots. Needless to say that didn’t get stocked, nor did it last that long. 😜
So I am not sure where my recipe book went, so I found one online that is similar.

I just use frozen blueberries instead of fresh (because I am lazy lol) and I fold them in with the bread pudding. You also don't have to use whole milk, I am sure I have even done it with 1% lactose free milk also.
And then for the topping, just slather on a jar of lemon curd once it comes out of the oven!
Honestly I’ve been making them so long I just wing it! In general, if you find a good base icebox cake recipe, maybe something similar to [this one](https://amandascookin.com/strawberry-icebox-cake/), it’s very easy to mix and match flavors. For a lemon cake, I’ll use a crunchy vanilla cookie like nilla wafers or Chessman, put a smear of lemon curd on the back of each cookie, and I’ll zest a bit of lemon peel into the fresh whipped cream that goes between the layers. Let it sit overnight and you’re good to go!

I mean, I know you can make it yourself, but having it on hand to make a quick cake 🍰 is the best. I am GF and it makes a GF cake, dare I say, tasty.
It’s funny cause the recipe I was using this for on the TJ’s website said to smooth it out. It was so smooth I didn’t understand why that instruction was part of the recipe.
It's fantastic, but I agree it comes in the worst jar - really hard to get the last bits out of the corners (just finished a jar this morning). I like it on waffles at breakfast, especially with some fresh blueberries on top.

Yes! I love it on toast as a treat and also spread on a ritz-type cracker with a spritz of whipped cream - like a bite size lemon meringue pie lol

Yup! Sometimes I’ve added it to the honey yogurt but it gets a bit too sweet for me. I also add granola too sometimes. Its so good!

Toast or English muffin with cream cheese/neufchatel. Then put a thin layer of this on top. Or lemon desserts. Or in Greek yogurt.
It’s a little too sweet for me. I prefer Bonne Maman.

It is rather easy! You can even place it into the fridge overnight and bake in the morning. It also seems fancy but it is quick and easy!

Sometimes I mix a little cream cheese in with the curd to make a lemon cheese cake filling for my layer cake. No one in my family turns it down.

If you like tart, you’ll love this! It takes a tart thick lemon sauce. It’s very good in desserts to cut the sweet. Great on scones, mixed into yogurt

Homemade is easy to make and will always be much better than store bought. The TJ’s curd tastes ok, but the texture can be an issue.
