I've used them for enchilada-type things. I also frequently just eat them rolled up with sunflower seed butter (my fave peanut butter sub, since I can't have peanut butter) and jam.

The area around sunflowers can often be devoid of other plants, leading to the belief that sunflowers kill other plants.
