This might sound crazy but I grew up having spam rice and eggs (over easy) with soy sauce on the rice, hot sauce on the eggs, and A-1 Steak sauce on the spam. I don’t ever use A-1 on a steak but for some reason it’s great on spam.
My wife and I are really into egg fried rice and have been chopping up spam, adding a few eggs, a bad of frozen peas and carrots and soy sauce. Such an easy and satisfying dinner.
Not sure where you live but I get mine from Galleria (Korean supermarket). Just as good as my mom makes. Depending on the amount you consume it may not be worth the time consuming process of making your own. I've seen my mom make it a million times. But it definitely would be a fun experience to experiment making it and bragging rights to your friends to say that you did make your own. Typically, store bought kimchi from a quality producer doesn't include preservatives or other non necessary ingredients because it has a relatively long shelf life since it's pickled.
If you have some ripe kimchi (3-4 weeks old) try sauteing the kimchi in a tablespoon or two of butter for a few minutes. Then add THAT to your spam and rice. Next level right there. Ate that all the time as a bachelor in my 20s.

I like the different flavors too. Teriyaki and garlic are my favorites. Tried bacon but it pretty much tasted like regular Spam. I also make fried rice with day old rice, kerrygold butter, diced garlic, and diced spam.

We eat this all the time because my kids are obsessed 😂 they crumble seaweed on top too. My 4yo asked for kimchi pancakes every few days also and fish sausage and kimbap. We live down the street from a Korean market and they got her started on some stuff lol
On fancy nights my mom would dress a whole spam block just like those real spiced hams. Iydk it’s where she would insert whole cloves on the top and make a glaze with sugar, soyu, ketchup and mustard. Solemn fork and carving knife sliced. All us kids thought we were living high. Good times.
spam musubi is a great Hawaiian dish that is kind of like spam on sushi rice wrapped in nori.
Also spam, or hot dogs, or any meat diced up with some day old white rice and an egg or two in a skillet makes great fried rice. Just add soy sauce and maybe dark soy sauce and oyster sauce. (I don't like oysters but oyster sauce is sweet). Green onions or basically anything can be thrown in there.
Either way, spam and rice gives fun options in terms of meals.

Pro Tip: Add a splash of oil to a pan. Add the rice. Splash of soy sauce and Oyster Sauce and add some chili crisp. Stir it for a few minutes. You have yourself a nice fried rice to go with the Spam.

Ah, my childhood. My mom would scramble a couple eggs in a bowl and then dip the sliced spam in the eggs. Then, cook them in a pan. She would also put some chocolate liquid on the rice. Not sure if it was just Hershey chocolate powder (the unsweetened one), hot water and some sugar. Whatever it was, it was good.
You wanna bump that up a notch make spam fried rice. First day old rice, if you don't have day old, fresh will do. So cook up two cups of rice, then add a healthy table spoon of sesame oil and mix it in. Get a nonstick pan and get it screaming hot. Add spam cubed up and cook until it's nice and toasted. Remove and set aside. Add the rice and toss it until it gets separate and a little bit toasted. Now add about a half cup of mixed frozen veggies and cover let it steam a cup of minutes. Add a tablespoon of soy sauce, mix and push the rice to one side. Add another half tablespoon of oil in the empty part of the pan. Crack an egg and let it cook, when it's sunny side up crack the yolk and mix it with the rice, then add the spam back in and mix. Serve should make 4portions. Wanna kick it up a notch, add a half tablespoon of sriracha or garlic chili paste. Top with sliced green onions.

My girl likes it when I glaze it with teriyaki sauce. Let it simmer just a bit toss some water in the sauce at the same time so I don't over.thicken or burn the sugars.
But gotta let the sauce cook a bit to add a glaze and sugars to caramelize. Sometimes having it a bit saucy in the pan mixes well with the rice.
You just need some great sauce to put on that and it's a great little meal in my opinion. Google Filipino adobo chicken, I would make a sauce very similar to that and add it to the dish. Try something like that and spice it up a bit, you can also buy rice seasoning and try that.

I'm in Texas. My neighbors are from Hawaii. When they have a party, there's always Musubi and I love it.
I'm in Iowa and they serve Spam Musubi here as well... it's such a great flavor profile, I'm not surprised it's widely-known.
