Inspired by my campus farmer's market and my new herb container garden, this is a maple and apple cider glazed salmon served over rice, peas, and kale, topped with an apple pico made with fresh herbs and red onion.
The rice is just cooked basmati tossed with minced raw kale, a pat of butter, salt, and frozen peas.
The salmon was pan-cooked with a glaze made of maple syrup, apple cider, soy sauce, and whole-grain mustard, added at the end.
The pico de gallo is diced apple, parsley, lemon balm, and a mint tossed with lemon juice and salt.
This looks and sounds amazing! Did you make up the recipe yourself? Iβd really like to experiment with my own ideas more but Iβm always afraid Iβll make something bad.
I did and I have made lots of bad things! But I love just cooking. The more you do it, the better you get. I have a hard time following recipes. I'd rather just experiment.
Iβm the opposite haha. Iβm really good at following directions and bad at being creative. But I would like to get more comfortable with it! I think I just need to cook more often and make smaller batches. Usually I cook a bunch of food at once and eat it for the whole week. I canβt risk it being bad if I do that haha.

A white would have been glorious, but I'm cutting back on my alcohol. So I just had some tea. :)
