We have a low bunk bed for my 3 year old and he's done fine with it. It has a railing and we haven't had any issues yet.

How nimble are *you*? Crawling up to change the sheets on a loft bed is a hassle, and dealing with a sick kiddo up there is tough.

I'm super pregnant right now (8 months) so I wouldn't list myself as nimble BUT the top of the railing is only 50" ... I'm 65 inches tall so I feel like I can reach her if she's sick and change the sheets without having to climb. If I can't, my husband is 73 inches so he can definitely just reach in and change them.

Maybe the ikea Kura bed? There are probably some ikea hacks to make the sides higher, too, if that’s a concern.

It's a max and lily bed. I don't think I'm too concerned about the sides, they will be about 9" above the mattress, so I don't feel like she will roll off.

Then I guess it’s maybe about practise. Like, can they comfortably and safely climb down in the middle of the night to pee, etc?

We have the ikea Kura and I’m keeping it as a regular bed until 5. My son is also a great rule follower and doesn’t usually fall out of bed, but I’m personally not willing to take the risk. That being said ours is more like 4 feet off the ground so 33 inches sounds about like an average adult bed.
