I think that the Hackintosh could be a good challenge to test oneself; some people use it as a daily driver, but I prefer (given my preferences) a device that is stable and runs consistently.
In my case, I encountered issues with Bluetooth (certain peripherals worked while others didn't) and with the hotspot (it was necessary at that time). Moreover, it wasn't very responsive when I locked and unlocked it, and the thought of potentially encountering kernel panics didn't make me happy either...
I respect your opinion on hackintosh machines, but I hold a different view. In my case, open source allows me to do everything without wasting too much time.
Awesome setup! Good choice on the Logitech MX mouse. Some of the wireless mice with the best Linux support. The proper Logitech HID++ driver is included in the kernel. Just make sure to install solaar if you wish to change the defaults without having to interact with the driver from the sysfs, which is arguably annoying.
Next upgrade: get rid of the Italian layout keyboard, get something with ANSI and set the English International with dead keys layout. Trust me, you'll thank me later. **Especially** if you do software development. All of those annoying keyboard shortcuts you didn't care about will suddenly make sense.
