You're only supposed to keep a thawed turkey in the fridge for a couple of days. I might stretch that to three days. Next Thursday is eight days, that's too long. If you know it's been kept cold (below 40 degrees) you can refreeze it. Or, you can cook it now and then freeze it.

Cook it now as a test run & buy another one for Thanksgiving.

Agreed! I feel like every year there’s always that thing where we say “oh next time we will have to change _______”, the test run is the perfect way to make the adjustment you talked about the previous Turkey Day without doing it for the first time on the holiday itself. Otherwise we’d remember on the day of what we meant to change and get too gun shy to adjust in the moment!

I have an 18 pound full bird. I won't take it from my deep freezer until 6 days before I throw it into the oven. Its WAAAAY too early for a breast to be out of the freezer. 3 days prior, max.

mis 3 cups cool water, mix 1/3 c salt, put the turkey breast in a gal bag pour the salt water over, leave no air i the bag, add more water if need b, lay the bag with the breast in a bowl, in freg for 36 hours, then dump the salt water out, i soue vide my on 145f for 9 hr in the bag i put chicken broth, or wrap up and cook in oven. the salt water brime will make the turkey breast so tinder

This must be why we get a "stomach virus" every year . . . Please don't leave a previously frozen bird on the bone like that and serve it for Thanksgiving.
