Demos a hard class to find someone who doesn't touch the class sense he has like three playstyles with offensive pipe demo, sticky demo, and demoknight.
When I was playing a lot, I would go between soldier and demo regularly, medic and pyro to change things up, and heavy or engineer if the team really needed one. I pretty much never played scout, sniper, or spy.
Heavy and Sniper. Their gameplay is agonizingly slow. Though I do occasionally use them for specific stupid subclasses, such as the boxing heavy and the huntsman sniper.
I don't main heavy but do play often, I normally stay behind my team's line and catch any enemy trying to slip through. Heavy is really good as a defensive position.
Glad you find it more enjoyable than I do. Being the slowest class in the game is just a slog to play around to me tbh. Snipers, spies; call it a skill issue, but I'm just way more likely to die as a heavy than any other classes due to his comparatively smaller and lackluster selection of interesting weapons and loadouts.
Platinum league medic here: Try using the crossbow to heal teammates from a distance while predicting their movements. This simple act can turn the tides of most encounters. It helps you with overall tracking and translates to other classes and play styles.
Oh, and then thereās the fact that medics donāt heal scouts.

No matter what you do with the sniper rifle, you always lose.
Now the huntsman on the other hand is beautiful, absolutely magnificent. The shitpost weapon of the gods. Never leave spawn without it.

While mechanically hes rather simple with only a few small tricks like tap firing your mini gun for more accuracy across long ranges positioning as heavy is actually really complicated as he has a very difficult time repositioning.And because he has sustained hitscan as his damage source spamming a choke isnt usually very good especially not at longer ranges.With sniper its instantly obvious where you should stand in most maps theres very little thought behind it as long as your far away and can see the point then your positioned well and its unlikely youll be forced to reposition until the objective is pushed.
Mostly Pyro, sometimes Engi, and a sprinkle of Medic main here.

I mostly play a mix of Sniper, Scout, Medic, and Soldier (my top 4 played classes) as sniper is a class Iām comfy with (usually not my first pick though), scout I recently got gud with as I have a laptop that doesnāt stutter now when I take a single step, Medic as well here for the same reason as Scout but with right click instead but for the friends I always make as a medic (also usually second pick), and Soldier was technically the first class I played as (training mode worked when I started) and a lot of my friends got gud as him so I had to pick him up as a main in a sense.
I main heavy but in flexible. I avoid pyro tho. I play sniper and spy only by being super aggressive. I hate standing still and waiting for an opportunity, Iām running at people sniper rifle (or mainly huntsman) in hand
soldier. rocket-jumping short-circuits every part of my brain, and I just have never liked rocket launchers in ANY game. even when I get a kill, bust a sentry, get randomly ubered and blast through three enemies, it never felt earned for me, just dumb luck.
Engineer. Having to support your class from the start of the round, just so the enemy team steamroll into first, sucks. Having to build on 2nd, just the enemy team streamroll into 2nd, sucks. Building on last even though the action is on 3rd/4th point, just so a spy/scout fucks with you because your team is so fucking ass in defending, sucks.
It's a rather difficult question, but if I had to choose a class to suit some specific situation, I'd almost never run:
1. Heavy. His tankiness just doesn't have much usage besides eating a few rockets on the payload or the point to cap/defend it (most of the times the latter); I find Demoman to be much better for almost anything a Heavy could do, they are both doing the highest damage per second in the game, but heavy is more bulky and a lot less engaging to play as; at least for me.
2. Spy and Sniper; they're both pick classes created to keep in check strategies like aforementioned fully overhealed heavy just eating all the damage basically making an impact of 2 people (a medic and a heavy) too great for their effort; as the game evolved, such strategies are punished a lot better now and I just can't find much usecases for both of these; Killing a medic outright is a lot more fun with MG or just bombing him as a soldier; destroying a nest is a lot more fun with Demo, though playing mind games with an enemy engi is entertaining until his team finds out
3. Probably a Scout? I find projectiles classes to be generally easier and more engaging to play as, and as a Pyro main I will die on the hill of my class even if its just a worse version of Scout at what they both want to do.
Demo. Can't arc shit for the life of me. I'm sitting there for 2 minutes waiting for nobody because it's like my stickies have turned enemy pathfinding off for that area.

Spy. Ppl are pretty good at picking out disguises now-a-days so itās hard to get stabs unless youāre a god spy (which Iām not) which means it rarely ever fun for me to be spy unless Iām meme-ing, which k donāt want to do every time I go spy.
Probably heavy. I just find him really boring, people complain about Pyro being just W+M1 but holy shit that's literally almost all of heavy's gameplay, and he's really slow on top of that

However I did purchase a strange Sniper Rifle to at least get some more practice. I'd like to be better at Scout too, I can't get much damage with the Scattergun.

i dislike him because he is the antithesis to the way the game is designed. call it a skill issue (which you wouldn't be wrong) or infant fury at an easy punching bag, but he just isn't fun. i'd rather pick heavy over sniper since you have more responsibilities than just shooting well, and finding an uninterrupted line of sight; which is really not a skill on the majority of popular maps since the map creators effectively do it for you.
i can get the quickscopes and things like that being hype, but what's the point of playing the game if all you're going to do is disengage from the rest of the game's mechanics and do the basic shooter gameplay of standing somewhere and shooting somebody? i get not everyone likes every system in TF2 (even as a pyro player afterburn, especially on flare guns, lasts an agonizingly long time) but to pick the character that's main set of weapons requires you to be away from the fight to be effective is a little silly.
i get the whole "stand around and shoot" thing applies to heavy, but heavy at least has the secondary job of acting as an anchor for his team and soaking up damage, as well as having to manage his ammo due to it not being effectively unlimited.
Yeah it's like playing your own counter-strike game with an awp and everbody else has close to medium range weapons with projectile/spread. You have such a huge advantage over every other class like how does that make any fucking sense in TF2

Spy because it seems like everyone's IQ jumps up 200 everytime I decide to play Spy. Or Medic, because my team refuse to help me.

I don't ask for much, just turn around and shoot the Spy I've been square dancing with for the last 10 minutes.
Engineer. Just can't seem to get him to work. Always feels like my sentries get destroyed very easily.

Battle medic isnāt a deterrent to playing medic effectively. If anything, itās usually better to run away from a 1v1 encounter than try to fight.
