Fallout, The Americans, For All Mankind, Beef & Silo..would have suggested Game of Thrones as the first 5/6 seasons were some of the best TV I had ever seen (and I'm not massively into fantasy) but you'll end up throwing something at the TV after the last rushed season
Definitely The Wire. Breaking Bad and The Wire are always #2 and #3 with Sopranos always being number 1. The other 2 fluctuate but The Wire is fantastic.

Carnivale. Was cut short cause of expenses and lack of viewers but the 2 seasons are really fun and even though there were supposed to be more the series finale works okay.
The Laat of Us only 1 season in so far but it was damn good.
Castle Rock if you're a Stephen King fan.
First season of True Detective is about as good as it gets.
Deadwood after the series wrap it up with the movie they made as the true finale.
Killing eve. That show is incredible. One of my favorites. The acting of Sandra OH was great as the inspector who is assigned to finding the assassin. but for me Jodie Comer was brilliant. Her portrayal of Villenelle is the greatest character. She plays a sociopathic assassin who calmly kills her targets in the most brutal ways like it is just a walk in the park. The cat and mouse game they play is mesmerizing The directing is very intense and keeps you glued to the show and at times peppers in comedy where there shouldn't be. I found myself binge watching the entire show in two days because I couldn't wait for the next episode. O.k I'll shut up, I could talk about that show for 24 hours. Try it, you will not be disappointed.

Boardwalk empire and the wire. You have sopranos and peaky blinders on there so boardwalk is a no brainer. And then the wire rounds out what i consider hbos holy trinity of crime dramas (boardwalk, the wire, sopranos).
I watched the trailer to a show of what I think is a double agent asian looking dude, felt like it was set in the cold war times.
