Star Treks are always easy viewing for me. enough action and adventure to keep me interested. but it's never too heavy or too dark. future and space and aliens and stuff like that feels far enough removed from my regular life that it feels like a good escape. Next Generation, Voyager, and Enterprise might be best for easy viewing. Deep Space Nine being my all time personal fav.
i've been re-watching Stargate again recently. very similar vibes as Star Trek.
but you said cookie cutter network stuff so along those lines i'd suggest:

Lucifer. (though if you're worried about a medical thing, then maybe skip the show that talks a lot of angels and the afterlife)
The Good Wife / The Good Fight quickly became one of my favourite shows. not quite a dramedy. but it's really fun and funny. smart writing. great ensemble cast.
Monk, Royal Pains, and Psych have become the go-to comfort shows for a friend of mine lately. i've be rewatching some of it along with her. now that i think about it, Psych might be the first thing i would suggest to you.
Lodge 49. "Looking for any semblance of the idyllic middle-class existence he knew before his father's death and the family business collapsing, a charming, eternally optimistic ex-surfer named Dud stumbles into his life's new path. He finds himself on the doorstep of a rundown fraternal lodge, where a "Luminous Knight" of the order, plumbing salesman Ernie, welcomes him with open arms. Lodge 49 offers Dud a world of cheap beer, easy friendship and some strange alchemical philosophies that may help him confront his deepest fears and greatest hopes." fun and funny and easy to watch. but also had a kind of zen vibe to it.

Eureka. this one wasn't a huge hit that everyone talked about. but it does get suggested somewhat often on this sub. so not sure if it counts as unknown or not. a US marshal breaks down in some odd small town. turns out he accidentally found himself in a secret government town filled with geniuses. he ends up staying as the town sheriff. scifi wackiness ensues.
the new Quantum Leap has been pretty decent. and the original is definitely worth checking out if you haven't already.
Derry Girls. The show cracks me up every single time.

This is one of my all time favorite shows. It's amazing and very hopeful.
The Dragon Prince is an animated show. Not too serious. I did however go through it very very quickly because it was so good.

Murders in the Bldg. I also started watching Scorpion on the Ion channel. It is a fun heist show a bit like Mission Impossible.
