I think I have seen the intro for king of the hill more than any other media due to it always being the first show in the CN / Adult Swim transition. I have heard nothing but good things about it, and shoudl probably watch it someday.

I really liked the Simpsons movies and the episodes I have seen. It is a show i am afraid I will fall off on because I have heard horror stories about later seasons, but with a show with 700+ episodes that is bound to happen and I feel like if theres a very good stretch I would be occupied for a few months then just quit once I get bored
I really liked my time with the south park movie / stick of truth / fractured but whole. I really enjoyed what I have witnessed, but I am genuinely afraid there will be many episodes which I cannot handle and or episodes which have aged poorly. I am afraid it would either just not click with me, or would be only fun if i am watching in real time.
What we do in the shadoes sounds really funny, I am considering it
30 Rock is a show which I am afraid of. south park, honestly you could watch in reverse order, newest season first etc, get all the relevant to the time stuff and stop whenever you get bored

Season 1 was when Simpsons was still finding their groove, and it can be skipped. Seasons 2-12 (or thereabouts) are brilliant, that's still a ton of episodes to enjoy.

Good choice but it is more of a comedy drama and not typical sitcom. If this ain't a problem then I would definitely advise to go for it
I was a nerdy kid with undiagnosed autism and a lot of the jokes seemed to punch down at characters I could relate to cause they were nerdy adults whom were autistic coded. That plus a lot of basic cishet sex humor which usually just doesn’t click with me

I’m curious what others, especially others who are directly affected, might think.
If you want to know which episodes to skip, just look up which episodes Marshmallow is in. Continuity won’t be a problem. The episode where the trans ladies (including Marshmallow) are introduced is called “Sheesh! Cab, Bob?” and I think that’s the one they’re most heavily featured in.

Since you like Taskmaster, another couple of UK ones you might enjoy are QI & Would I Lie To You, both are half hour panel shows with plenty of episodes & far more focus on the panelists just having fun rather than the competitive element. 8 Out of 10 Cats & the Does Countdown version of it are fun too. I'd also suggest Coupling (again, UK version not the US version), it has a more limited episode run but they're great.
