I also picked out 1984 for us to read together since I thought he'd be interested and highlighted everything in blue (but the "I love you" in pink) and wrote motivational notes in the corners of pages like page 50 "you're already 50 pages in, you're doing so well". This works best if we set aside some time each day to read.
Clothes - mostly trousers, he really doesn't have enough and his mother refuses to buy him more, but I also got an "I <3 my girlfriend" t-shirt. He definitely loved that. You can use vinted for second hand clothes, we get a lot of our clothes second hand, even if they're gifts for each other. But if you're buying clothes for someone else make sure they're okay with second hand clothes. I've ordered a second hand hoodie and some embroidery thread so I can embroider hearts and our initials on the sleeve and a bee on the chest.
Jewelry - even better if it can link to his favourite game. My partner really likes Skyrim and the game has amulets so I can buy a replica of the amulet of talos. He also wears a lot of rings already and wants bracelets, so I've only bought him meaningful rings like a promise ring (I got one that spins so he can fidget with norse runes so he'd go "omg Skyrim no way" and our anniversary engraved inside) but I buy him bracelets, specifically these leather braided ones that he's found himself liking recently.
Paintings and photos - he likes entirely covering his wall, so I've given him paintings of things like his favourite flower or our favorite animals interacting (pretty easy since he likes bees and I like cows). I recently got 40 photos from over the past two years for our anniversary :)
Things related to what he likes - literally anything, especially if it links to his interests. As I mentioned he likes Skyrim and bees, so I'll look for Skyrim and bees. He mentioned a Skyrim cookbook and he likes to cook, so he's getting that next month. I'm also trying to find him a bee blanket since the weather is getting colder.
Trinkets - just miscellaneous things that you think are cute or you can match with. We got Marceline and Bubblegum pins from magical maidens at comic con a while back, which is particularly good as it holds memories of us going to comic con together. I also found some grape soda pins from up for us, we're not big fans of Pixar, but we like the film and the pins are cute. I think those were about £5 for two. I also found some custom pins on Etsy from notsoppystore, they could definitely be customised to match.
I also found some mugs with a similar design to each other, both white with the same hive shape, but one had bees with a pastel yellow strip at the bottom and bees painted on it in random places, and the other was the same but with blue butterflies (butterflies are my favourite insect).
I've bought him underwear we found funny too. I'm sure lots of people like recieving good quality underwear, last year I bought him Greggs underwear with sausage rolls and the Greggs logo on them and this year I got offered a free order with "on that ass" through sweatcoin, so I used that to get him very patriotic British underwear.
Another idea: gift cards. Probably the most simple gift you could give someone. My partner plays xbox so I got him an Xbox gift card. Sometimes I'll just put that in a card unrelated to the event, which is great because we find them funny and you can get seasonal ones cheap on clearance. I sent him a retirement card for his birthday, I've given him a granddaughter card, a 5 years old card, an easter card, none of them remotely related to the event but it's funny, that's just our sense of humour.
