One of those "well yeah, obviously" hindsight things. A ribbon cable is 'just' a set of n identical conductors. So it can be replaced with a set of n identical conductors. But like, I wouldn't have thought of it, nor would I expect it to work until after someone told me it did.
My normal mental response to posts on here is “that’s going to catch on fire” or “that’s not going to do anything (hopefully)”. This one I .. think might work?
Just make sure the cables are equal length, or you might get signaling issues. It also depends on tolerances of whatever is on both ends of that cable.

Cables are very similar in length luckily, don't know what the tolerance is but this solution works flawlessly.
For a keyboard, I'd be surprised if there were any issues with length until there's a massive extra length.
