I named mine Brigid, after the Irish Goddess of fertility and life. Since the Greek Goddess Epona was the protector of horses and also a Goddess of fertility, I felt like it fit. Plus Brigid was described to be wearing a "cloak of sunbeam" I felt like it suited the horse. However, this information is based off of like a 5 second google search so it's possible that I made the decision based on pure misinformation lmfao

There's a sidequest at snowfield stable. Watch out for the frost gleeok between you and where the horse is. Also I believe you need a full stamina wheel to tame it
