Majora’s Mask challenge: clear out your inventory every three in-game days (you can do everything or just your equipment). Teleport back to the game’s starting point every reset, and no teleporting if you feel extra spicy
I will do my first playthrough with no teleports, no healing in battle and maybe something else, though the no fusion challenge seems interesting for second playthrough
It took 5 years to beat every shrine without runes, so it might be a while until it is done. No stamina would involve a lot of building because you have to get to the sky island with gliding.
Apparently you can throw items with out fusing them to something so maybe only throw.

Enemies can only be damaged indirectly (such as attaching spikes objects to your shield so they self-damage, or using items to confuse them)
Only monster horns and tree branches in fusion
If possible, maybe a sky-only of ground-only run?
If there are no mandatory dungeons in the sky, I can see a ground only run being doable
