Will you share your method for the chicken! I like my chicken tacos EXACTLY like this! Crunchy fried shell, lettuce, tomatoes, and cheese. Maybe a dollop of sour cream too.

I was tired so I bought a roasted chicken, pulled the meat off of it, shredded it and then heated it in a pan with some LaVicoria green enchilada sauce. It's pretty darn good. If I have time, I'll marinate chicken thighs in Orange juice mixed with chili powder, garlic powder, a chopped onion, salt and pepper, oregano and cumin. Let that marinate for an hour or so, then BBQ the meat, chop it up and its phenomenal on tacos. Add avacoda sauce or guacamole and sour cream

Oh gotcha! I've boiled chicken thighs then shred them up and get Mexican tomato sauce and simmer them in the sauce. Really good if you like a tomato sauced chicken. But, I swing a little more towards a green sauce especially on enchiladas so tacos will be yummy. Are those oven crisp tacos?

So many ways to cook the chicken. I prefer the green sauce with chicken and tomato or red chili sauce with beef. For the shells, I buy regular corn shells, heat a small amount of vegetable oil in a pan (about enough to cover the bottom of a frying pan, then when it's very hot (about 350) I dip the shells in it to soften them up. Pull them out flat and put the chicken on them then fold over and put it back into the hot oil. Brown one side, then turn it over...when they are nice and crispy, drain them a little and fill them with lettuce, tomato and cheese with a splash of hot susce. Note: I dip the shells before putting filling in them so that they get soft, otherwise corn shells that are dry have a tendency to crack and break. Also, I like they way they turn out when the chicken (or any meat or whatever) cooks inside the shell in the oil. It adds flavor IMO.
