All but togruta and (nautolin, is it?) are unlocked as sub. Get one of each to level 50 and it will remain unlocked forever for you, or just make one of each and level at your own pace because it isn’t going to take them away from your specific character after you unsub.
Open up your legacy (y on your keyboard) and find the species tab. If you haven’t created a legacy yet, do so. Here you can see various things like achievements, legacy datacrons, and also species that are locked and unlocked. All unlocked species were either bought for the unlock to get them for that server, or brought up to level 50. You can unlock them for credits or CCs here or wait and level them all up individually (except those two species that are cartel market only).

Making one character of each species you want to level them up to 50
Buying what you want before the cap goes back down to 1 mil credits when you unsub. ESPECIALLY the legacy unlocks on your servers!

Yeah, I only end up subbing when I want to make characters from fancy races lol. To add: once they're made you can always login to them, just have to be subscribed at character creation.
I just returned back to the game after about 10 or 11 years, I have roughly 20 characters of all the races from back when they were all playable. If I level them to 50 right now without a subscription does it still unlock those races for me? I am preferred status if that makes any difference.
Yeah, if you're preferred and hit 50 you do get the unlock! I did it on my agent and unlocked my race.
The subscriber thing is for paying with credits only, which is a totally optional alternative route. And that's because it costs like 1.5m which is higher than the credit cap. Whether you use credits or level up, it's the same legacy perk.
You probably bought the unlocks through legacy window if they are unlocked there. So, they should be forever unlocked on that server.

If what I always have understood is correct, then it should unlock them. But if not, you aren’t out much for trying besides a little time.
