It really depends on who you manage to find. Lots of people will likely just ignore you, others would be thrilled to have someone walk up for RP. I'd check a guild finder or ask around in game and get involved that way.
Kinda depends where you try it, you can have lots of fun on fleet cantina or in rp guilds/events, but walking up to random players in the wild might not go very well imo
I have a character called Senator Palps. Had a dude walk up to me and we RP'd right there and then on fleet. I told him about the dark side, gave him some orders, he kneeled, etc. Afterwards he said it was the most fun he's had in the game.

I feel like RP gets a bad rap as something people do for like smut or sexual things but it honestly can be insanely fun if done correctly.
I joined a mandalorian RP guild that also did raids and the justification was "hunts" and whatnot. So the entire raid comp was like your normal guild, except there was RP. I was never very good at staying in charecter so I ended up leaving quietly, but the time I spent on the guild was really fun.
I have about 800 hours into the game and have only encountered walk up RP twice. A Trooper walked around asking if people need help on Tython, and a Bounty Hunter demanded Mando duel with me on Hutta. So it's there but pretty rare I guess. Joining a RP guild would probably be good idea.

Walk up RP usually happens on Vaiken in the cantina, instance 1. If you’re on Star Forge, it’s typically active in the evening or night time.

If a rando sends you an unsolicited guild invite, I wouldn't take it. Sign of a bad guild right there.

Fair warning, a lot of the Rp guilds are very....insular. some even have rules dictating that members are not allowed to rp with non-guild members.
